Two successful meals this week and its only Tuesday. Don't know if I have mentioned before but J1 is very 'particular' with his food. It has to be eaten with the right fork and some days he doesn't like chicken, others beans... so its a relief to have a good start to the week.
Burmese Pork Curry
1 Onion5 cloves Garlic
knob of ginger
kaffir lime leaves
lime zest
Process above mixture together. Put pork spareribs, salt, vinegar (2 tablespoons), couple of sliced green or red chillies, fresh or dried tumeric and some oil into a pot. Bring to boil, reduce heat, simmer for 1 and 1/2 hours until pork is tender, add water if necessary.
When tender, add couple tablespoons sesame oil and cook until oil separates from mixture. Serve with steamed vegetables and rice.
Lime Barramundi
Barramundi filletZest of 1 lime
Ginger
Garlic
Chilli
Olive Oil
Marinade the fillet in the lime, ginger, garlic, chilli (pounded together coarsely) and olive oil for a couple of hours. Best if you can BBQ the fillet but pan fried is ok. Squeeze lime juice over before serving. Serve with rocket/parmesan salad and a potato gratin. I also made a tomato jam but the fish was better by itself.
