Kofta

Have a HAPPY Birthday Ben - hope your holiday was spectacular. I look forward to some photos and recipes from your adventure.

Not really a Cambodian recipe but great if you feel like slopping around in front of the TV.



YOUGURTLU KEBAB

5 tomatoes peeled and chopped
4 TB olive oil
salt and pepper
1 ts sugar
4 pita breads
Lamb Kofta mixture (500g ground lamb, salt pepper, finely chopped onion and chopped parsley)
1/2 cup yogurt
1 ts paprika
2-3 TB toasted pinenuts
parsley to garnish

Cook tomatoes with 1 TB oil, add salt, pepper, sugar and cook till soften, blend. Shape kofta into balls, cook under grill. Toast pita bread and break into pieces.
In individual bowls, put a quarter of the toasted bread, a quarter of the tomato sauce, top with yogurt. Mix the paprika with the remaining oil and dribble over yogurt, sprinkle with pinenuts and parsley.

thanks so much - will complained when he heard this because he thinks you never mention him in your blog!

in celebration i think i might try your tuna receipe, though i have done this before with a bit of wasabi. . .i love your photos with the new lense, but think the tuna photo appears a little blurry, think you should invest in a tripod!
